Today I would like to share with you my recipe for my delicious banana bread, which I have been working on for years, as many people have been asking for it. This vegan recipe is a real all-rounder: a concentrated energy booster that will put a smile on every food lover's face!
Banana bread
for one loaf pan (28 cm), approx. 8 people Ingredients for the dough: 100g margarine
110g sugar (alternative: 80 xylitol and 30g raw cane sugar)
530g spelt flour 1030 (alternative: mix of wholemeal spelt flour, spelt flour 1030 and spelt flour 630)
2.5 tsp baking powder
4 mashed ripe bananas
160ml plant-based milk
1.5 tsp vanilla extract
60g chopped walnuts/hazelnuts or cashew nuts
4 pieces of dried fruit (e.g. figs or dates)
1 tsp cinnamon (only optional)
1 pinch of salt
Ingredients for the decoration:
flaked almonds (approx. 30g)
chopped almonds/roasted hazelnuts (approx. 30g)
1 handful of mixed nuts (optional)
cocoa nibs to taste (optional)
1 ripe banana
1 pinch of salt
agave syrup
Preparation:
1. first preheat the oven to 170 degrees fan.
2. melt the margarine with the sugar in a pan.
3. at the same time, mix the flour and baking powder. Mash the bananas. Cut the dried fruit into small pieces. Grease the baking tin. Sprinkle the base of the baking tin with chopped or flaked almonds to taste.
4 Mix the flour and baking powder mixture with the melted margarine and sugar using a hand mixer. Then stir in the other ingredients (bananas, vanilla extract, chopped walnuts, dried fruit, cinnamon, pinch of salt). 5 Now pour the batter into the baking tin.
6. cut a banana in half and place it decoratively on the surface of the dough. Decorate all around with chopped, flaked and whole nuts. Drizzle the entire surface with agave syrup and a pinch of salt so that the surface caramelizes nicely at the end.
7 Bake in the preheated oven for approx. 65 minutes. Please note that the baking time depends on your oven. I usually cover the banana bread with aluminum foil and let it bake for another 10 minutes longer. But it also depends on how soft you want the banana bread.
8. then leave to cool slightly, as the caramelized surface is usually still very hot.
9. enjoy hot with peanut butter or cold. Enjoy your meal! It tastes particularly good the next day, of course, when it has reached its moist and delicious consistency in the fridge ;)
INSPIRATION
Here you will find lots of photos of my variations on this basic recipe. There are no limits to your imagination. Instead of dried fruit, you can also use chocolate chips, cocoa nibs or blueberries, for example.
